Over the weekend we heard about a new food truck in NJ called The Thai Elephant Food Truck. We don’t know much yet, but they seem to spend time in both Hoboken and Montclair and serve both lunch and dinner.
Their full menu seems pretty extensive, with spring rolls, sates, soups, pad thai, cashew chicken, massaman curry and more.
