I Was A Ham and Cheese Test Bunny For Wafels & Dinges

Sounds like a bad 1950’s horror flick, but it’s true – I was a ham and cheese test bunny for Wafels & Dinges!

As we mentioned last week, W&D is opening a café in the East Village. Things are getting closer, because last Thursday we saw this tweet:

Ham and cheese in Liège Dough. Sounds like a no-brainer. All we had to do was show up at the truck on Friday from 1-3pm.

We were expecting ham and cheese sandwiched between two halves of a waffle, but that wasn’t it.

Ham and cheese were baked into the dough, the waffle was cut in half, and it was topped with scallions.

Speaking with Sophie and others on the truck, the ham was German ham and the cheese was raclette.

Since they were testing a new item and wanted feedback, we told them the ham came through loud and clear and was very tasty. The cheese…not so much.

When we suggested more cheese (that’s going to be written on our tombstone – “We Would Have Liked More Cheese”), they said there was a problem with cheese leaking out the sides when you put in too much.

Not too difficult to solve. Use a stronger cheese so the same amount comes through better.

They asked if it needed more seasonings. I said maybe rosemary, which goes well with ham, but it was still pretty good.

I asked if they had mustard for a dipping sauce. No, but “good idea” was the reply.

That’s what being a test bunny means. Back and forth, giving opinions, and helping to help perfect a dish.
