Chef Sam’s love for cooking started at home. As a teenager, he began experimenting in the kitchen, hoping to impress his mother with dishes like steamed fish, Thai omelets, and soups. Initially pursuing a degree in computer engineering, he soon realized his passion lay elsewhere. Against his family’s wishes, he changed direction to study culinary arts—a bold move that would define the rest of his life.

Unpaid, Undeterred: Michelin Roots and French Refinement

His culinary career began humbly, as an unpaid intern in a Michelin-starred restaurant in Bangkok. Working 10 to 12 hours a day, Chef Sam gained hands-on experience in high-pressure environments. He drew inspiration from Thai culinary figures like Chef Ton (Le Du) and Chef Noom (Chin by Siam Wisdom), whose mentorship emphasized discipline, precision, and creativity. Eventually, his skills earned him the position of Head Chef at a well-known French restaurant in Bangkok before moving to the U.S.

Chef Sam’s talent also caught attention in Thailand’s media scene—he appeared on popular food channels and was invited to judge senior culinary projects at Rangsit University, where he graduated. His invitation as a guest lecturer and capstone judge solidifies his position as a respected mentor in the Thai culinary landscape.

Upon joining The Ritz-Carlton, Denver on a J-1 visa, Chef Sam quickly proved himself. Instead of staying in a trainee role, he was promoted to Head Line Cook, entrusted with menu development and leading the kitchen line—a rare achievement for someone new to the U.S.

Signature Dish Recognition

Among his standout creations was the “Lamb Herb Crust with Romesco Sauce,” which earned acclaim from both the Executive Chef and General Manager. Other signature dishes like “Beef Wellington” and “Beef Rossini” further showcased his ability to merge Western flavors with refined technique.
