Today we felt for Salmon Burger. During the winter, Chef Samir returned to Morocco for a couple of months, which is where he grew up. When he returned, Samir said he would slowly be introducing new menu items to the truck.
The first new menu item we’ve seen since his return is a Wild Pacific Salmon Burger. That doesn’t sound very Moroccan, as salmon are cold water fish, but it did sound like something we wanted to check out.
We’ve had salmon burgers before, but they were usually made with a mixture of salmon, bread crumbs and spices, more along the lines of crab cakes.
The salmon burger at Comme Ci Comme Ça was basically a rounded piece of pure salmon, with a very light coating of what appeared to be egg and various herbs. The light coating helped the patty brown nicely on the grill.
The salmon burger was served inside a pita bread that was much larger than the patty. This cause the top of the bread to fold over, and the bottom of the pita got overwhelmed by the salmon burger and fillings too, easily breaking apart.
The fillings were a nice assortment of greens, plentiful tomatoes and red onions. Samir also made up a creamy dill sauce that was in the sandwich, and he also gave us another small container of it. The dill sauce went well with the salmon. Dill and fish are a good match.
We enjoyed the salmon burger a lot, but it got quite messy with the pita breaking on the bottom. Our suggestion is to go with the flow on the burger theme, and put this on a sturdy bun. The flavors can stand up to the increased amount of bread.
