Just before Memorial Day, Paris Sandwich Truck appeared on the streets of NYC. They already had 2 storefronts in Chinatown, so of course the best way to expand on the brand was to open a food truck.
We’ve enjoyed several banh mi’s from Paris Sandwich Truck, and they have rice bowls as well.
This time we went for the vegetarian part of the menu, Stir-Fried Lemongrass Tofu Banh Mi, which cost $8.
All the banh mi’s at Paris Sandwich Truck have pickled daikon and carrots, fresh cilantro, and a long slice of cucumber.
Underneath the ingredients just described is the main course. In this case, it looked like like mushrooms, but was stir-fried lemongrass tofu.
We’re not usually big fans of lemongrass, but in this sandwich, it tasted smoky and salty. There was plenty of flavor to carry the sandwich.
The consistency of this tofu was firmer, more like seitan than the tofu we’re used to eating.
The lightly pickled daikon and carrots were a nice offset to the smoky and salty tofu, and the fresh cilantro came right through as well.
Another thing about Paris Sandwich Truck is the baguettes are nice and soft.
