SUPER BOWL PARTY MENU

We’re having a few friends over for a Super Bowl Party today.  In case anyone needs some idea, our menu is as follows:

Guacamole, pineapple habanero salsa, tortilla chips, white bean chicken chili and of course, beer.  For the ladies, we’re going to have Chambord French Martinis.

Since some of these recipes need advance planning and I’m a little short of time today, I’m just going to give you the guacamole and French Martini recipes.  The others are too long and detailed for this close to the game.  I’ll print the white bean chicken chili for next Friday’s Recipe.  It’s a real winner.

This guacamole recipe is from an old cookbook written by my wife’s aunt called Gourmet Cookbook 434 Easy-to-Prepare Recipes by Libby Hillman.  We have a copy of the book with a personal note from the author to my wife, from when she was 9 years old (my wife, not the author).  We still have the cookbook and use it regularly, bit I’m not sure if it’s still in print.  This recipe is simple, easy to make, and it’s our favorite guacamole recipe.  As always, we make some small changes to our taste.

Guacamole

1 large ripe avocado

1/2 small onion, chopped fine

1 clove garlic, minced

1 tbsp olive oil

1 tbsp red wine vinegar

1 tbsp lime juice

1/4 tsp salt

1/8 tsp pepper

coriander or fresh chopped cilantro to taste

(we prefer to leave out 1 tomato, peeled and diced, but it’s in the original recipe)

Mash avocado, but leave it slightly lumpy.  Add other ingredients. Serve with tortilla chips. Makes 1 1/2 cups.  That’s the entire recipe, short and very good.

Chambord French Martini


1 1/2 oz vodka

1/2 oz chambord

1/2 oz pineapple juice

Shake ingredients with ice and strain into a martini glass, with a lemon twist on the glass. (Note: We rim the glass with sugar before pouring the drink, but it’s not in the recipe.)
