Cremini Mushrooms
This variety of mushrooms and white mushrooms are of the same type. However, cremini mushrooms are more mature with a much stronger flavor, firmer texture and brown color. They are also known by another name – baby Bella mushrooms.
Portobello Mushrooms
Portobello mushrooms are fully matured cremini mushrooms. Large and dark brown in color, these mushrooms have open, wider cap. You can find deep brown gills under the cap. It gives a meatier flavor and texture when cooked.
Again – you can use any mushroom variety in this recipe, but we prefer the Cremini mushrooms.

A Few More Cooking Tips
Cleaning the mushrooms
You can use a dish towel or a damp paper towel to clean the mushroom. There should be no dirt on the mushrooms. Don’t use water to clean them. Mushrooms do not brown well after absorbing water.

Don’t soak them. Just rinse with cold water and then pat dry with paper towels.
Don’t overcrowd the pan while cooking mushrooms
